Malay Kuih attempt #1

Steamed White Sugar Cake

Ingredients :
(A)
1 tbsp tapioca starch
280gm rice flour
300ml water
1/2 tspn salt
- add all ingredients together and mix well.
(B)
220gm sugar
300ml water
1 tspn pandan essence
- add all ingredients together and cook in medium heat untill sugar melted.
(do not boil)
(C)
1 tspn yeast
2 tbsp warm water
- add the yeast into the warm water and leave aside for about 5 mins.
Method :
- add mixture (B) into (A) immediately once the sugar has melted.
- add in ingredient (C) when the (A+B) mixture has cool off.
- leave aside for fermentation about 1 1/2 - 2 hours.
- preheat tray and steam the mixture for 20mins in high heat.
- leave to cool completely then cut it.

I found some awesome Malay kuih recipes from a blogger and thought that I should really try some of them out. I started off with the easiest of all, the steamed white sugar cake. The taste is there, but the texture is slightly different from what I remember! And I nearly burn down the kitchen. ><! Now I think it’s rather reasonable for the hawkers to charge us the price as they are because it’s really hard to produce a good Malay kuih! How am I ever suppose to help out, with this standard? Sigh.

Anyway, I’ll post some pictures up if I really manage to do something that’s edible AND also presentable! Wish me luck! Smile
